This recipe is by no means affiliated with the great Jamaican patty company (Tastee) recipe, but it is a sure way of having your patty and eating it too when you have no Tastee around.

Now, you may alter this Jamaican beef patty recipe as you wish, but I recommend that you try it as is first and let me know the outcome with any suggestions for the other viewers' pleasure.

INGREDIENTS FOR BEEF FILLING

2     lbs ground beef
1/2 loaf french bread
8    sprigs of thyme
2    ozs escallion
1/2 teaspoon Accent
2    small hot peppers (scotch bonnet)
1    teaspoon paprika
1    teaspoon salt

FILLING METHOD

1. Grind escallion and hot peppers in a mincing mill.

2. Add to ground beef with salt.

3. Place meat in a saucepan making a well in the center, then place four (4) sprigs of thyme.

4. Cook without adding any water or fat until meat has lost its broth and only certain amount of oil remains.

5. Pour off excess oil and add this to the paprika to be used later on, strained for coloring meat.

6. While meat is being cooked, pour sufficient cold water over bread in a saucepan to cover and soak for a few minutes, then squeeze dry, saving water.

7. Pass bread through mincing mill and return the ground bread water with 4 sprigs of thyme and cook until bread is dry.

8. Combine meat and cooked bread.

9. Add color, paprika in sufficient quantity to color the meat to taste.

10. Cook together for a further 20 minutes.

11. Add Accent, remove from fire and cool for filling pastry circles.

Now that you have prepared the filling for your Jamaican Beef Patty, here are the ingredients and the easy to follow method for preparing the pastry/crust.

INGREDIENTS FOR PASTRY/CRUST

11  ozs beef fat or shortening (suet)
4   cups flour
1   teaspoon salt
2/3 cup iced water

METHOD

1. Trim all skin and fatty membrane from the suet and set overnight in freezer.

2. Next day, with a very sharp knife shave suet as finely as possible.

3. Combine salt and flour, then work in suet as you would work in shortening in plain pastry, cutting it in with two knives.

4. Add iced water in sufficient amount to have a dough which can be rolled out.

5. Form into a ball and with a rolling pin, pat gently, turning the dough over once or twice in order to have it all properly held together.

6. Set overnight wrapped in wax paper in freezer.

7. Next day, pull off enough dough (after defrosting) to roll into a circle the size of a breakfast saucer.

8. Dip dough in flour before rolling.

9. Roll quite thin and cut in a circle. (you may use a saucer for help with the circle cutting)

10. In the center of each circle place a spoonful of meat and fold the dough over to form a crescent shape.

11. Seal the edges with egg white or by crimping the edge and folding the dough slightly under.

12. Do not prick the pastry.

13. Bake on ungreased tin sheet in a hot oven for about 35 minutes.

Tasty Jamaican Bulla Recipe With Ginger

Bulla can be eaten with anything of your choice and liking but to tell you the truth, the best thing to eat bulla with is PEAR or Avocado if you wish.

Bulla and Pear (Avocado) is an old time favorite, especially in the Jamaican countryside. This traditional style of eating bulla is adopted by many generations of Jamaicans as well as other internationals.

However, to date, more and more people have been eating bulla with a number of other things. These include fried fish (sprat, snapper, parrot), butter (margarine), peanut butter, cheese, etc. Anything you can think of that can accompany bulla, we Jamaicans have tried it already!
This recipe is a Jamaican Ginger Bulla Recipe. However, if you would just like to have a regular bulla recipe, just omit the ginger from the list of ingredients and you will have just a normal flavoured Jamaican bulla.
It will have more of a vanilla flavoured taste than anything else. But, like any other recipe, this too can be altered to suit your preferences.

INGREDIENTS


2 3/4   cups brown sugar

1/2      tablespoon salt

2        cups of water

1        cup margarine

2       tablespoon ginger

2       tablespoon vanilla

7 1/2   cups flour

3        tablespoon baking powder

1/2     tablespoon baking soda

1        teaspoon nutmeg

Flour for rolling out bulla

METHOD

1. Dissolve sugar and salt in water,add ginger,margarine and vanilla.

2. Sift together all dry ingredients and combine with liquid gradually.

3. Dough must be clammy and heavy. Place the dough on floured board and dust with flour until dough is manageable.

4. Roll out to a thickness of about 0.75cm and cut into slices.

5. Bake in a 375 degree oven until done for about 20-25 minutes.

French Man Cove

The area is still, thankfully considered relatively virgin territory and Frenchman’s Cove is a perfectly secluded spot that will make you fall in love with the water instantly.
Frenchman's Cove was built by a man named Garfield Weston.
He was a billionaire whose business empire included Fortnum and Mason.The resort was run as a "no expenses spares" VIP destination and used to be one of the most exclusive (and, indeed, expensive) resorts in the whole world.
One of the most beautiful beaches in the Caribbean, let alone Jamaica, this white-sanded shore, set against a magnificent backdrop of exotic tropical gardens and crystal-clear mountain streams, is so idyllic.
It’s no wonder it was featured in the major motion pictures Club Paradise and Treasure Island.
Frenchman’s Cove is tucked between two rocky bluffs and consists of a lagoon which meanders around a bar of sand from one direction while the sea barrels in from the other, pinched between two tiny headlands that are overhung with greenery. This gives the beach a luminous green light.




Visitors pay a small fee for entry but it is well worth it. You enter through some lush gardens, which then opens up into a gorgeous little secluded beach cove. It also has a fresh water river flowing into the beach.
Lots of fish in the river, as well as a rope and swing for the kids to play with. There is also a jerk hut on the beach with drinks and food made and done to order, as well very clean bathrooms.

To come to Jamaica or LIVE in Jamaica and not ever visit Frenchman's Cove would be like going to the movie theater to only buy popcorn instead of watching a movie. It just makes no sense!

Docters Cave Beach

A definite favorite among travelers in search of a good time, the second city is a great place to have your fill of relaxation and revelry.
World famous white sands and crystal clear waters fed by a mineral spring combine at the beautiful Doctor’s Cave Beach in Montego Bay.
It was founded in 1906 nestled between the Marine Park and the Hip Strip when Dr. Alexander James McCatty generously donated his beach property.Dr. McCatty and his friends were mainly from the medical profession and, at that time, they entered the tiny beach through a cave, hence how the name was born.
The cave however, was destroyed by a hurricane in 1932.
The water which is crystal clear has a temperature range, winter and summer from 78 to 84 degrees Fahrenheit, 22 to 28 Celsius. 



The translucent water is known for its mineral content and its golden sands and turquoise water provide the perfect place to enjoy the tranquil warmth of the Caribbean Sea. Visitors can even watch brightly colored tropical fish swimming close to the surface.


Although many other beaches have some of the qualities of Doctor's Cave, none have all of them. It is just a mile away from the closed beach where Tom Cruise once juggled his bottles in Cocktail.
This beach is one of the most appealing beaches in all of Jamaica.
This beach, like many others in Portland, has streams running into the sea and good swimming.
Winnifred Beach is found in the Fairy Hill community inPortland on the island’s lesser traveled east coast.
This beach is home to a delightful reef just offshore that is not only perfect for snorkeling, but for its clear, calm, bright-blue water justly popular with locals.
This beach is one of the last remaining FREE public beaches in Jamaica. The beach is well known and has been used for generations by the immediate local community as well as by Jamaican citizens and  international tourists who come there to spend a leisurely day at sea.
A long, unpaved road leads to the wide, white-sand beach that stretches along a sheltered bay. Thick groups of trees and vines act as a backdrop to the aquamarine water filling the foreground.
It is, however, possible to reach down to the beach without an SUV or a 4-wheel drive vehicle. The best way to find your way down there though is to ask locals which road to take then follow it all the way down to the beach.




Come to this beach for a real authentic Jamaican public beach experience. Some say that you are not a Jamaican until you have visited here! Visit the beach on the weekend and you may be lucky enough to join Jamaicans swimming, playing cricket or just relaxing. Weekdays, however, are much quiter quieter and you may even have the luxury of having the whole beach to yourself. At the base of the hill, large trees shade a flat strip of land, where several food and drink vendors prepare fresh fish dishes and Jamaican jerk delights, which is a specialty of Portland.

There is also a mini-field, perfect for a game of football, and on weekends, there are horseback riding tours down the beach and boat trips to nearby Monkey Island.
So be sure to take the time out to visit Winnifred Beach whenever you are on the East cost, Portland. You will enjoy the privacy and the calmness of the water and surroundings.
